Thai Tofu Tacos

1 1/2 15 oz blocks firm tofu -- crumbled

4 tablespoons vegetable oil -- divided

4 tablespoons soy sauce -- divided

1/2 small yellow onion -- finely chopped

1 1/2 teaspoons minced garlic

1 1/2 teaspoons minced fresh ginger

1/4 teaspoon cumin powder

1/8 teaspoon freshly ground cinnamon

1/8 teaspoon freshly ground nutmeg

1 tablespoon apricot preserves or orange marmalade

1 1/2 teaspoons chili paste

1 1/2 teaspoons packed light brown sugar

1/2 cup smooth peanut butter

1/4 cup tomato puree

1/4 cup coconut milk

2 tablespoons water

4 corn tortillas -- warmed

1 cup fresh vegetables (such as shredded

carrots, finely chopped romaine lettuce,

and/or diced tomatoes)

 

In a non-stick skillet, saute tofu in 2 tablespoons of oil, stirring often,

until golden brown. Sprinkle on 3 tablespoons of soy sauce and saute 1 to 2

minutes; set aside. (It may be necessary to saute tofu in two batches,

depending on the skillet size.)

 

In a large pot over medium-high heat, heat remaining oil. Add onions and saute

until translucent, stirring often. Stir in garlic, ginger, dry spices,

preserves or marmalade, chili paste, and sugar. Cook over medium heat for 2

minutes. Stir in peanut butter, tomato puree, coconut milk, water, and 1

tablespoon of soy sauce. When mixture is well-blended and hot, add prepared

tofu and gently simmer, stirring often, for 10 minutes. Remove from heat, cool

slightly. Divide equally between corn tortillas, top with fresh vegetables, and

serve immediately.
