Far East Frittata with Snow Peas and Ginger

1 tablespoon dark sesame oil

1 tablespoon mirin

3 green onions -- sliced

2 cloves garlic -- minced

1 cup water chestnuts -- drained & sliced

1/4 pound snow peas

2 tablespoons low sodium soy sauce

1 tablespoon fresh ginger -- grated

1 cup basmati rice -- cooked

4 large whole eggs

2 large egg whites

1/2 cup plain nonfat yogurt

1/2 cup lowfat milk

 

The water chestnuts and snow peas in this flavorful frittata give it a

pleasant crunch.

 

Serves 6.

 

Preheat the oven to 350 degrees F. Heat the oil and mirin in a large

ovenproof skillet and add the onions and garlic. Cook for about a

minute, then stir in the water chestnuts, snow peas, soy sauce, and

ginger. Add the rice and toss to coat everything evenly. Beat the eggs

with the additional egg whites, then whisk in the yogurt and milk. Pour

this over the rice mixture. Bake 25 minutes, and cool for 5 minutes

before serving.

 

Recommended companion dishes:

Whole wheat toast and fresh papaya slices.
