Quick Garlicky White Bean Soup

6 cups cooked or canned cannellini (white kidney)

beans

4 cups high-quality vegetable broth

6 garlic cloves -- minced

2 teaspoons fresh thyme -- or 1 teaspoon dried

1 tablespoon extra-virgin olive oil

2 medium carrots -- diced

1/2 medium fennel bulb -- diced

Salt and freshly ground black pepper

 

In this soup, cannellini beans are blended with a rich broth, then combined with

garlic and thyme. Barely cooked carrots and fennel add a sweet and crunchy

touch. In the variation at the end of the recipe, turkey sausage adds

considerable interest and heartiness. This is the kind of soup that can be made

with little or no planning if the kitchen is well stocked.

 

In a large soup pot, combine the beans, broth, garlic, and thyme. Cover and

bring to a boil. Simmer for 10 minutes.

 

Meanwhile, in a separate skillet, heat the olive oil. Add the carrots and fennel

and saute until limp, about 4 minutes.

 

Process the soup until smooth in the blender. Return the soup to the pot. Add

the sauteed carrots and fennel. Simmer for 10 minutes. Skim off any foam that

rises to the top. Taste and adjust seasoning, adding salt, pepper, and

additional thyme if necessary. Serve hot.
