Honey Herb Vinaigrette

6 tablespoons olive oil

1/4 cup fresh lemon juice

2 tablespoons honey

1/2 teaspoon Dijon mustard

1/2 teaspoon minced fresh garlic

1/2 teaspoon minced fresh chives or tarragon

1/2 teaspoon minced fresh parsley

1/4 teaspoon salt

1/8 teaspoon pepper

 

Makes about 1/2 cup.

 

A spring salad is delicious with this herb vinaigrette, especially if you

add arugula or endive to the lettuce mix.

 

In shaker jar or small bowl, whisk together oil, lemon juice, honey and

mustard. Add garlic, chives or tarragon, parsley, salt and pepper. Let

stand 20 minutes before using.
