1/4 cup olive oil

1 1/2 pounds Savoy cabbage -- thinly sliced

1 pound carrots

1 medium yellow onion

3 1/4 cups Tomato and Basil Pasta Sauce (Veg)

(26-oz jar Classico di Napoli)

16 ounces Anthony's Angel Hair Pasta -- whole-wheat

4 green onions -- chopped for garnish

 

Set water on to boil for the pasta. Thinly slice or shred the cabbage). Pare the

carrots; cut into 2-inch strips. Peel the onion. Thinly slice (expect 1 cup

slices per medium onion).

 

Cook angel hair as package directs; drain. In Dutch oven, over medium-high heat,

heat oil; stir in cabbage, carrots and onion. Cook and stir until vegetables are

tender-crisp, about 2 minutes. Stir in pasta sauce then angel hair; heat

through. Top with green onions. (6 to 8 servings)
