Guest guest Posted March 22, 2002 Report Share Posted March 22, 2002 * Exported from MasterCook * Marinated Tofu with White Radish Salad Recipe By :Bridget Jones Serving Size : 4 Preparation Time :0:00 Categories : New Import Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon sugar 1 teaspoon sesame oil 2 teaspoons Japanese rice vinegar 2 tablespoons light soy sauce 2 tablespoons sake or dry sherry 1 garlic clove -- crushed 1 pinch crushed red pepper flakes 11 ounces firm tofu -- see comment 1 large white radish -- coarsely grated 2 green onions -- finely shredded at a slant 1/2 cucumber -- peeled, halved, seeded, and grated 2 tablespoons sunflower oil 6 tablespoons cornstarch -- (6-8) Whisk the sugar, sesame oil, rice vinegar, soy sauce, sake, or sherry, garlic, and red pepper flakes together until the sugar has dissolved. Cut the tofu into 8 slices, each about 1/2 inch thick, and place in a shallow dish or on a deep plate. Spoon the soy sauce mixture over the tofu, cover, and marinate in the refrigerator for 1-2 hours. For a fuller flavor, the tofu can also be marinated in the refrigerator for up to 24 hours. Coarsely grate the radish. Finely shred the onions on a slant. Peel and halve the cucumbers. Remove seeds. Grate. Combine these three vegetables in a bowl. Carefully drain the marinade off the tofu, pouring it into the radish salad, leaving the slices of tofu moist. Toss the radish salad well so that it is fully coated in the marinade. Heat the oil in a non-stick frying pan. Place the cornstarch on a plate. Dip the tofu slices in the cornstarch, turning them to coat each side and patting the cornstarch on gently. Add the tofu slices to the frying pan as they are coated, and cook each one for 1 to 1 1/2 minutes on each side, until crisp and pale golden. Transfer to the plates and serve immediately with the radish salad.
