While waterwalking in the pool this morning I was talking to a fellow weight watcher who told me that she made this in individual servings by using muffin tins instead of making it into one large kugel. By doing this the tops and bottoms of the " muffins " get more crunchy which she said her family really liked. As one large kugel this seemed to stay mushy no matter how long I left it in the oven. By using the muffin tins you will also get more than 12 servings (maybe about 16) so each one would actually be less than 3 points. I would also think that this would be good using other vegetables - for instance substituting sweet potatoes for the white potatoes, or yellow squash for the zucchini. Actually you could probably use any combination of vegetables that happens to strike your fancy. Miriam * Exported from MasterCook * Vegetable kugel 3 pts.
