Aunt Fannie's Green Tomato Relish

Amount Measure Ingredient -- Preparation Method

2 gallons green tomatoes

1/2 gallon white onions

--or red (not sweet or yellow)

1/2 quart banana peppers

1/2 quart red peppers

1/2 cup salt

1/2 gallon white vinegar

4 cups sugar

3 tablespoons black pepper

 

Chop all of the vegetables pretty finely, maybe even in

the food processor, and set aside.

 

In a stockpot, combine all the remaining ingredients and stir

well until dissolved. Add the vegetables to the liquid and

bring to a boil. Remove from heat and pack in quart jars

as usual for canning.
