Guest guest Posted April 25, 2002 Report Share Posted April 25, 2002 * Exported from MasterCook * Sauteed Spinach and Tofu Recipe By :Delores Riccio Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1/4 cup chopped shallots 1/2 cup diced firm tofu 1/4 cup pitted black Moroccan olives 1 tablespoon chopped fresh dill Freshly ground pepper 2 tablespoons broth or water 10 ounces fresh spinach -- well washed SUPERFOODS: shallots, tofu, spinach Heat the olive oil in a large skillet, and saute the shallots until they just begin to brown. Add the diced tofu, olives, and seasonings. Stir-fry 3 minutes. Remove and reserve the tofu and olives. Add the broth and spinach to the pan, and steam the vegetables, stirring constantly, until wilted; this only takes a minute or two. Return the tofu and olives, and heat through.
