Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1 large onion -- chopped 1 stalk celery -- chopped 1 large green bell pepper -- chopped 2 garlic cloves -- minced 2 tablespoons tomato paste 28 ounces canned Italian plum tomatoes -- chopped 1/2 cup water 1 bay leaf 1 teaspoon dried thyme -- crumbled 1 teaspoon Tabasco sauce 1 teaspoon file powder 1/8 teaspoon cayenne pepper salt and freshly ground black pepper 8 ounces cooked vegetarian burger crumbles 1 pound cavatappi Serves 4 Pasta served with hot spicy sauce like this one makes a piquant change. Heat the oil in large saucepan over medium heat. Add the onion, celery and bell pepper. Cover and cook until soft, about 7 minutes. Remove lid, stir in the garlic and tomato paste, and cook 1 minute. Add the tomatoes, water, bay leaf thyme, Tabasco, file powder, cayenne, and salt and pepper to taste. Bring to a boil, then reduce heat to low, add the vegetarian burger, and simmer for 15 minutes. Discard the bay leaf and keep the sauce warm over low heat. Cook the cavatappi in a large pot of salted boiling water, stirring occasionally, until it is al dente, about 8 to 10 minutes. When the pasta is cooked, drain it and transfer to individual plates or shallow bowls. Top with the sauce and serve immediately.
