Guest guest Posted April 28, 2002 Report Share Posted April 28, 2002 * Exported from MasterCook * Vegetarian Brunswick Stew Recipe By :The Vegetarian Meat & Potatoes Cookbook, Robin Robertson Serving Size : 6 Preparation Time :0:00 Categories : Vegetarian Meat & Potatoes CB Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 package vegetarian sausage links -- cut into 1/2 " pieces 1 medium yellow onion -- finely chopped 1 stalk celery -- finely minced 1 large all-purpose potato -- peeled & diced 2 cloves garlic -- minced 1 1/2 teaspoons peeled & grated fresh ginger 3 1/2 cups vegetable stock or water 1 14.5 oz can diced tomatoes -- with their juices 1 16 oz package frozen succotash 3 tablespoons vegetarian Worcestershire sauce or tamari or other soy sauce 1/2 teaspoon Tabasco sauce 2 teaspoons prepared mustard 1 teaspoon light brown sugar 1/2 teaspoon ground allspice salt & freshly ground pepper 1 12 oz package frozen vegetarian burger crumbles 1/2 teaspoon liquid smoke flavoring Heat the oil in a large pot over medium heat. Add the vegetarian sausage and cook, stirring a few times, until browned on all sides, about 5 minutes. Remove the sausage from the pan and set aside. Add the onion, celery, potato, garlic, and ginger to the oil remaining in the pot. Add 1/4 cup of the stock, cover, and cook, stirring a few times, until the vegetables are softened, about 5 minutes. Add the remaining 3 1/4 cups of stock, then stir in the tomatoes, succotash, Worcestershire sauce, Tabasco, mustard, brown sugar, allspice, and salt & pepper to taste, and bring to a boil. Reduce the heat to low and simmer uncovered, stirring occasionally, until the vegetables are very tender, 45 to 50 minutes. During the last 10 minutes of cooking, add the reserved sausage, vegetarian burger crumbles, and liquid smoke. Serve hot. Source: " MC Formatted by Karen C.
