The Denver Post this week had some interesting vegetarian recipes for

the Cinco de Mayo celebrations. Most of the following recipes can

tolerate a decrease in oil, but otherwise they aren't bad at all.

Green Chile Risotto

Amount Measure Ingredient -- Preparation Method

2 tablespoons butter

2 tablespoons extra-virgin olive oil

1 small onion -- minced

2 cups Arborio rice

5 cups chicken stock -- (5 to 6)

- warmed on the stove

3/4 cup poblano chiles -- roasted and

- or green chiles -- peeled and chopped

1 1/2 cups Manchego cheese -- freshly grated

- or Cotija or Parmigiano-Reggiano

fresh cilantro -- chopped

 

Pam Savage has incorporated Mexican flavors into nearly every dish she

makes. Chile peppers add zing to this risotto.

 

Serves 6-8.

 

Melt butter with olive oil over medium heat. Add onion and saute until

translucent. Add rice and cook 3-4 minutes. Add 1/2 cup warm chicken

stock. Simmer, stirring in stock 1/2 cup at a time, until the stock is

absorbed and the rice is al dente, about 30-40 minutes. Remove from heat

and stir in green chiles and grated cheese. Garnish with cilantro.

We've had this debate around here so many times.

 

There are vegetarian based broth mixes that taste like

" chicken " and you can use that instead. You can't

always get people to read the recipe through and

realize that it says something like that. There are

folks on the list who are NOT vegetarian but are

eating more vegetarian foods and they don't always

think before sending. I try and change recipes if they

say " chicken " in them. But sometimes, depending on the

hour, when you post things that you don't mean to or

you forget to change things.

 

You can't penalize a person for using that word in a

recipe. There are substitutes so just think of that

when you see it.

 

This is NOT a vegan list. It is a vegetarian list and

a lot of folks on the list are not vegetarian. Yes,

some people think of broths as vegetarian when they

aren't. We can't be the food police. People will post

what they want. If they remember, they change it. If

they don't, oh well.

 

We've had these debates all throughout the life of

Veg-Recipes. Live and let live...

I agree 100% with Risa's comments. And I, for one, prefer to receive recipes as

they are written. Rarely only do I not change something. Broth/stock changes

are so simple, you use what you have, and there are many, many recipes in the

archives. Lighten up!
