Guest guest Posted May 4, 2002 Report Share Posted May 4, 2002 * Exported from MasterCook * Hot and Spicy Chili Rice Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : No Meat Rice & Grains Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups UNCLE BEN'S® Original Brown Rice 2 1/2 teaspoons cumin powder 1/4 teaspoon red pepper flakes -- or to taste 1 can black beans -- rinsed and drained 1 can diced tomato -- drained 1 1/2 cups onion -- chopped 1 1/2 tablespoons chili powder 3/4 cup cheddar cheese -- shredded (less or none -- if preferred -- my note, vcb) Cook the rice according to package directions adding the cumin and pepper flakes. While the rice is cooking, mix together the black beans, tomatoes, onions and chili powder and simmer 15 minutes or until thick. Serve over the rice and top with the cheese.
