Sliced Mangoes With Crystallized Ginger

4 cups sliced peeled mango -- (about 3 pounds)

2 tablespoons finely chopped crystallized ginger

1 tablespoon thinly sliced fresh mint

1 tablespoon fresh lime juice

1 tablespoon honey

 

To dress up the serving platter, garnish with a handful of fresh

raspberries or blackberries.

 

1. Place all ingredients in a large bowl, and toss gently to

combine. Cover and chill 1 hour.

 

Yield: 8 servings (serving size: 1/2 cup).
