Picante Black Beans

Amount Measure Ingredient -- Preparation Method

2 cups dry black beans

2 quarts water

6 ounces low sodium tomato paste

2 cloves garlic -- minced

1/4 cup chopped fresh cilantro -- or parsley

2 cups low sodium oil-free Mexican salsa

 

SERVINGS: 8. PREPARATION TIME: 10 minutes. COOKING TIME: 3-4 hours.

 

Cook the beans in the water until tender, about 3 hours.

 

Preheat the oven to 350º. Drain the beans and place in a large

casserole. Add the remaining ingredients, mix well, and bake 30 minutes.

 

HINT: Mash the leftovers and se as a sandwich spread.
