PREPARATION TIME: 10 minutes (need cooked potatoes). COOKING TIME: 15 minutes Chop the potatoes into large chunks. Combine with the onion in a large nonstick frying pan. Cook over medium heat for 5 minutes, stirring frequently. Add the mushrooms and asparagus. Cook, stirring frequently, for another 10 minutes. Add the spinach.
