Guest guest Posted May 27, 2002 Report Share Posted May 27, 2002 * Exported from MasterCook * Quick Saucy Vegetables Recipe By : The McDougall Program, John and Mary McDougall, page 204 Serving Size : 2 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Sauces And Marinades Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups frozen mixed vegetables 1 cup water 2 tablespoons low-sodium soy sauce 1 tablespoon cornstarch or arrowroot 1/4 cup water ***SEASONING OPTIONS 1*** 1/2 teaspoon turmeric 1/2 teaspoon ground cumin 1/2 teaspoon Cajun spice mix (see separate recipe) ***SEASONING OPTIONS 2*** 1/2 teaspoon dried basil 1/2 teaspoon dried dill 1/2 teaspoon paprika ***SEASONING OPTIONS 3*** 1/2 teaspoon dried thyme 1/2 teaspoon dried rosemary 1/2 teaspoon dried marjoram SERVINGS: 2. PREPARATION TIME: 5 minutes. COOKING TIME: 20 minutes. Serve this sauce over whole wheat toast or over whole grains or pasta. It may also be made with fresh vegetables cut into small pieces. Cook the vegetables in the 1 cup water until tender, about 8 to 10 minutes. Add the soy sauce and optional seasonings of your choice. Mix the cornstarch or arrowroot in the 1/4 cup water. Add to vegetable mixture while stirring. Cook and stir until thickened. NOTE: Some commercial Cajun spice mixes are now available. To make your own Cajun spice mix, combine 3 tablespoons paprika, 2 teaspoons onion powder, 2 teaspoons ground black pepper, 2 teaspoons ground white pepper, 2 teaspoons cayenne, 1 teaspoon ground dried oregano, 1 teaspoon ground dried thyme, and 1/2 teaspoon celery seed.
