Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***SAUCE*** 1 cup low fat soy milk 1 1/2 cups water 1 tablespoon low-sodium soy sauce 1 teaspoon dried basil OR 1 tablespoon fresh basil 1/4 teaspoon dried dill OR 1 teaspoon fresh dill 1/4 teaspoon freshly ground black pepper 3 tablespoons arrowroot or cornstarch ***PASTA*** 1 pound uncooked egg free whole wheat linguine OR spinach fettucine or linguine noodles 3 quarts boiling water ***VEGETABLES*** 1/4 cup water 1 tablespoon low-sodium soy sauce 4 cloves garlic -- crushed 1 carrot -- scrubbed and sliced 1 1/2 cups broccoli broken into small flowerettes 1 1/2 cups zucchini cut in half lengthwise -- then sliced 1 cup snowpeas -- cut in half 2 cups cleaned and sliced fresh mushrooms ***GARNISH*** 1/2 pint cherry tomatoes -- sliced in half freshly ground black pepper -- (optional) SERVINGS: 6. PREPARATION TIME: 15 minutes. COOKING TIME: 30 minutes. To make the sauce, combine the soy milk, water, soy sauce, basil, dill, pepper, and arrowroot or cornstarch in a saucepan and cook, stirring, over medium heat until thickened, about 7 minutes. Remove from heat. To cook the vegetables, heat the water in another pan, add the soy sauce and garlic, and stir well. Add the carrot and broccoli. Cover, stirring occasionally. After 3 to 4 minutes, add the zucchini and snowpeas. After 2 to 3 minutes, add the mushrooms. Cook 2 minutes more. Turn off the heat and cover. Cook the pasta in boiling water until just tender, about 8 minutes. While the pasta is cooking, warm up the sauce over very low heat. When pasta is done, drain well and pour into a medium-sized bowl. Stir the sauce into the pasta well, tossing it. Add the vegetables and toss again to mix well.
