Honey Mustard Beans

Amount Measure Ingredient -- Preparation Method

2 cups dried navy or pea beans -- soaked overnight

8 cups water

1 large onion -- diced

2 dried chipotle chilies

1 cup tomato ketchup

1/4 cup honey mustard

1/4 cup honey -- or to taste

Salt

black pepper

 

Drain beans. Combine beans in large pot with 8 cups fresh water. Bring to boil.

Reduce heat and simmer, partially covered, until just tender, about 1 hour. Skim

off any foam that rises to top of pot.

 

Preheat oven to 300 degrees. Combine beans, their cooking liquid, onion,

chilies, ketchup, mustard, honey, and salt and pepper, to taste, in bean pot or

baking dish and mix well. Cover and bake for about 3 hours or until beans are

completely tender. Check occasionally to make sure beans remain moist and add

more hot water if needed. Remove and discard chilies. Serve hot.

 

Servings: 6 as a side dish.

 

TIPS- Another method is the quick-soak method. Place beans in pot with water 3

inches deep. Cover and bring to boil. Boil 2 minutes. Remove from heat. Cover

and let stand 1 hour before draining and proceeding with recipe.
