I've a few more to format and that will empty my folder. did anyone else collect the recipes? here's today's recipe <http://www.northjersey.com/page.php?level_3_id=230 & page=3690757> * Exported from MasterCook * Low Fat breakfast burritos Recipe By :Jan Wolff, Food Writer, New Jersey Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons canola oil 8 ounces meatless sausage (bulk or patties) 1 medium onion -- diced 1 medium green or red bell pepper -- seeded and chopped 2 packages tofu scramblers -- crumbled (see variation) 1/2 cup shredded cheddar cheese alternative Salt and pepper to taste 4 large flour tortillas 1/2 cup salsa (optional) Heat oil in a large skillet over medium heat. Saute sausage until browned, then add onion and pepper. Saute for an additional 5 minutes. Add tofu or eggs. Continue to stir mixture until tofu is hot or eggs firm up. Add salt and pepper to taste. Gently fold in cheese until melted. Serve in a warm tortilla with salsa, if desired.
