Vegetarian Stew for St Pat's in the Crockpot

Amount Measure Ingredient -- Preparation Method

2 cups water or vegetable broth

2 tablespoons pickling spice mix

2 teaspoons sea salt

3 tablespoons grainy mustard

1/4 cup brown sugar

2 large heads cabbage

1 pound carrots -- peel/scrub, trim

6 medium potatoes -- peel/scrub

1 pound pearl onions (optional) -- fresh or frozen

 

Combine first five ingredients in crockpot. Remove the core from the two heads

of cabbage. Cut each in half, then each half into quarters. Place in crockpot

with whole carrots, potatoes, and onions. Cook on low for 8 to 10 hours or on

high for 4 to 6 hours.

 

Servings: 6 to 8.

 

MENU: Starting the celebratory meal with a hearty bowl of vegetarian split pea

soup will satisfy big appetites as well as protein concerns. Finishing off with

a fruit and nut platter will contribute additional protein and other nutrients.

And when it's all over, perhaps a cup of green tea would be in order.
