JICAMA can be found in most well-stocked supermarket produce sections and gourmet produce markets. Look for a roundish, tan-skinned vegetable. It almost looks like a large potato. Jicama can vary in size from about a half-pound to several pounds. Peel and slice in thin strips to add raw to this Asian-style pasta salad. Both were delicious — although different — and had one thing in common: jicama. Matchstick-sized pieces of raw jicama gave a delightful crunchiness to both spring rolls. It reminded me of the texture of a crisp apple or a water chestnut. Nutr. Assoc. : 1405 0 0 0 96 0 0 0 0 0 0 0 0
