Asian Pasta Salad with Jicama

8 ounces cooked thin pasta

1 bunch chopped scallions

1 small jicama -- peeled and cut

into matchsticks (julienned)

2 cups fresh bean sprouts

1 medium red or green bell pepper -- diced

1/4 cup toasted sesame seeds (optional)

1/2 cup toasted cashews (optional)

Dressing:

3/4 cup orange juice

1/4 cup sesame oil

1/4 cup tamari soy sauce

2 garlic cloves -- minced

1 tablespoon fresh grated ginger

 

Combine all salad ingredients in a large bowl. Whisk dressing ingredients

together in a food processor or in a small bowl. Add to salad. Toss lightly to

combine.

 

Serves: 4 as a main dish, 6 as a side dish.

 

JICAMA can be found in most well-stocked supermarket produce sections and

gourmet produce markets. Look for a roundish, tan-skinned vegetable. It almost

looks like a large potato. Jicama can vary in size from about a half-pound to

several pounds. Peel and slice in thin strips to add raw to this Asian-style

pasta salad.

 

 

PASTA - vermicelli, thin spaghetti, or Japanese soba or udon noodles -- are

suitable

NOTES : I've ordered vegetarian spring rolls at both Mexican and Malaysian

restaurants. Both were delicious — although different — and had one thing in

common: jicama. Matchstick-sized pieces of raw jicama gave a delightful

crunchiness to both spring rolls. It reminded me of the texture of a crisp apple

or a water chestnut.
