Easiest Gravy

Recipe By :

Serving Size : 0 Preparation Time :0:00

Categories : Condiments

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3 tablespoons olive oil

3 tablespoons whole wheat flour

2 tablespoons powdered vegetable broth

or 2 vegetable bouillon cubes

3 cups potato water -- (from boiling potatoes)

or plain water

Heat oil in a large skillet. (A skillet is preferable to a saucepan because

gravy distributed over a larger heated area thickens faster.) Whisk in flour and

powdered vegetable broth. (If using bouillon cubes, add liquid first and then

add cubes.) Add potato water or plain water slowly, stirring with a whisk over

medium-high heat, until gravy thickens to a desired consistency.

Yield: 3 cups.

NOTES : This easy recipe is from the American Vegetarian Cookbook, from the Fit

For Life Kitchen, by Marilyn Diamond, 1990. One of my [Jan] Favorite comfort

foods has always been mashed potatoes and gravy.
