Stir Fried Vegetables with Almonds

Amount Measure Ingredient -- Preparation Method

1 tablespoon brown sugar

or honey or molasses

1 tablespoon soy sauce

1 tablespoon vinegar

1 tablespoon peanut oil

or non-stick cooking spray

1 teaspoon grated fresh ginger root

1 cup blanched slivered almonds

1 cup green onions -- bias-sliced

into 1/4-inch lengths

6 ounces fresh pea pods -- or frozen

2 cups shredded chinese cabbage

or regular cabbage or bok choy

1 cup thinly sliced red or green bell pepper

1 cup fresh bean sprouts

 

To prepare sauce: Combine first three ingredients in a small mixing bowl, set

aside.

 

Heat the oil in a large wok or skillet. Add the ginger and almonds, stir-fry for

30 seconds. Add green onions (scallions) and stir-fry 1 minute. Add pea pods and

cabbage, stir-fry for 2 minutes. Add the pepper and bean sprouts and stir-fry

for 1 more minute or until the vegetables are crisp to tender. Pour sauce over

vegetables and almonds, toss to coat thoroughly. Serve immediately.

 

Servings: 4 to 6.
