Guest guest Posted May 29, 2002 Report Share Posted May 29, 2002 * Exported from MasterCook * Penne with Tomato and Pole Beans (Green Beans) Recipe By :Anne Casale 1995 Serving Size : 6 Preparation Time :0:00 Categories : Pasta Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds pole beans -- washed and trimmed 1 tablespoon olive oil 3/4 cup thinly sliced scallions 12 ounces peeled and seeded ripe tomatoes -- see directions 1 1/2 tablespoons minced fresh sage 3 large bay leaves 2 1/2 teaspoons coarse salt 1 teaspoon freshly ground black pepper 1 pound penne rigati (or any medium tubular pasta) 1/4 cup grated imported pecorino romano cheese PREP NOTES: Recommend well-ripened round tomatoes: Prep: blanch, peel, coarsely chop, include juice 1. Bring 6 quarts of water to a boil. Add beans and cook until barely tender, about 3 minutes. Using a slotted spoon, transfer beans to colander and drain thoroughly. When cool enough to handle, slice beans diagonally into 1-inch lengths. Reserve water for cooking pasta. 2. Heat olive oil in a 12-inch nonstick skillet over medium heat. Add scallions and saute, stirring constantly, until barely tender, about 1 minute. Add tomatoes, sage, bay leaves, 1/2 teaspoon of the salt, and pepper. Bring sauce to a boil over high heat. As soon as it reaches a boil, reduce heat to low and cook, stirring frequently with wooden spoon, for 10 minutes. Add beans and mix well with spoon. Cook, partially covered, stirring frequently, until beans are tender, about 10 minutes. Remove bay leaves from sauce just before tossing with pasta. 3. Bring water in which beans were cooked back to a boil. Add maining 2 teaspoons coarse salt and cook pasta until al dente. Drain pasta in colander and transfer to a bowl. Toss pasta with 3/4 of the sauce; spoon remaining sauce on top. Serve with pecorino romano cheese.
