Guest guest Posted May 30, 2002 Report Share Posted May 30, 2002 * Exported from MasterCook * Curried Mushroom Puffs Recipe By : Country Stand Mushroom Recipes and Ideas booklet Serving Size : 14 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds fresh mushrooms 1/3 cup salad or olive oil 3 tablespoons butter or margarine 1/4 cup finely chopped onion 1/2 teaspoon curry powder 1 tablespoon flour 1/2 cup milk 2 eggs -- separated 1/4 teaspoon salt 1/8 teaspoon ground black pepper YIELD: 14 to 24 mushroom puffs Rinse, pat dry and remove stems from mushrooms (save stems for use in soups, stews, etc.). Brush caps with oil. Arrange in a baking pan; set aside. In a small skillet melt butter. Add onion and curry powder; sauté 3 minutes. Stir in flour; cook and stir 1 minute. Blend in milk; cook and stir until thickened. Remove from heat; blend in egg yolks, salt and black pepper. In a small mixing bowl beat egg whites until stiff but not dry. Gently fold into sauce mixture. Spoon curried mixture into mushroom caps. Bake in a preheated moderate oven (375 F) 12 to 15 minutes.
