Guest guest Posted June 1, 2002 Report Share Posted June 1, 2002 * Exported from MasterCook Mac * Spaghetti wAsaparagus & Three Peppers wGorgonzola Vinaigrette Recipe By : http://www.newlondonday.com/ Serving Size : 4 Preparation Time :0:00 Categories : salads pasta vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- FOR SALAD: 1 pound spaghetti -- cooked - drained and cooled 1 bunch asparagus -- trimmed - and cut in 1-inch pieces 1 red pepper -- halved - seeded and sliced in strips 1 yellow pepper -- halved - seeded and sliced in strips 1 green pepper -- halved - seeded and sliced in strips FOR DRESSING: 1 cup olive oil 1/2 cup red wine vinegar 1 cup Gorgonzola cheese -- crumbled 2 tablespoons parsley flakes 1/4 teaspoon salt 1/8 teaspoon pepper Serves 4 Cook the pasta according to package directions, drain and cool it. Trim ends of the asparagus and cut it on an angle into 1-inch pieces. Cut the pepper in half, remove seeds, and slice them in strips. Combine the pasta and vegetables. Mix the dressing ingredients and toss. Serve chilled on a bed of red leaf lettuce.
