TO MAKE THE DRESSING: In a large glass measuring cup, whisk together the vinegar, peanut butter, soy sauce, brown sugar, pineapple juice, sesame oil, ginger, and garlic. 2. TO MAKE THE SLAW: In a large bowl, combine the green and red cabbage, carrots, cilantro, and chives. Whisk the dressing and add to the salad. Toss to coat. TIP - The easiest way to prepare fresh ginger is to peel it with a paring knife, or the edge of a spoon, then finely grate it on a handheld grater.
