Asian Super Slaw

Amount Measure Ingredient -- Preparation Method

ASIAN DRESSING:

1/3 cup seasoned rice vinegar

1/4 cup creamy peanut butter

3 tablespoons reduced sodium soy sauce

3 tablespoons brown sugar

2 tablespoons pineapple juice

1 tablespoon dark sesame oil

1 teaspoon finely chopped fresh ginger

2 garlic cloves -- chopped

SLAW:

5 cups shredded green cabbage (1/2 head)

2 cups shredded red cabbage (1/4 head)

2 carrots -- shredded

1/2 cup chopped fresh cilantro

1/2 cup chopped fresh chives

 

1. TO MAKE THE DRESSING: In a large glass measuring cup, whisk together the

vinegar, peanut butter, soy sauce, brown sugar, pineapple juice, sesame oil,

ginger, and garlic.

 

2. TO MAKE THE SLAW: In a large bowl, combine the green and red cabbage,

carrots, cilantro, and chives. Whisk the dressing and add to the salad. Toss to

coat.

 

TIP - The easiest way to prepare fresh ginger is to peel it with a paring knife,

or the edge of a spoon, then finely grate it on a handheld grater.

 

REDUCING CALORIES, FAT, CHOLESTEROL, SODIUM:

* Eliminating the vegetable oil and replacing it in part with pineapple juice

* Slightly reducing the amount of peanut butter

* Relying on a small amount of sesame oil for flavor instead of vegetable oil
