Bean burritos, an all-time favorite when I lived in California, can be assembled in under five minutes. Warming the tortillas briefly before rolling prevents breakage. For added appeal, top with low-fat sour cream, sliced jalapeño chiles and other vegetables. Spread beans on each tortilla and top with avocado slices. Add cheese, tomatoes and salsa. Wrap each burrito in microwave-safe plastic wrap. Warm 1 minute in microwave on high power or until cheese melts.
