Tofu Tahini Spread - Jan Wolff

1 pound firm tofu -- drained

3 tablespoon tahini

2 tablespoon miso

2 teaspoon soy sauce

2 scallions -- minced

or more scallions -- to taste

1 large carrot -- grated

Ground black pepper -- to taste

 

1. Using a potato masher or food processor, mix the tofu with the tahini, miso,

and soy sauce. Stir in the minced scallions and grated carrot. Add pepper and

additional soy sauce, if desired. Makes 2 1/2 cups.

 

MISO is a flavoring paste made from soy beans, salt, and various grains. Through

a process of fermentation, miso develops enzymes that aid digestion. It will

keep indefinitely in the refrigerator, so it's a good idea to keep a container

on hand to flavor soups, spread, etc. Soybeans contribute to miso's high protein

count, making it nutritious as well. Miso is available in a few different

varieties, from light to dark. The darker miso has a stronger flavor and the

lighter variety is milder. Jan likes the light miso in this spread, but any

variety can be used with good results.

NOTES : This Asian-inspired spread is guaranteed to be a crowd pleaser, but it

also makes an interesting filling for a vegetarian sandwich. Gather an

assortment of sesame crackers, rice cakes, and pita bread. Tofu tahini spread

contains no cholesterol and is relatively low in calories. Preparation time is

only about 10 minutes (with the help of a food processor) and it's a great dish

to whip up for unexpected guests (with the ingredients on hand.)
