Falafel Pizza

Amount Measure Ingredient -- Preparation Method

1 1/2 cups all-purpose flour

1 cup whole wheat flour

2 teaspoons instant yeast

1/4 teaspoon salt

2 teaspoons granulated sugar

2 tablespoons sesame seeds -- toasted

1 cup hot water

2 tablespoons olive oil

1/2 teaspoon chicken bouillon powder

1/2 cup boiling water

1 cup onion -- chopped

3 garlic cloves -- minced

19 ounces canned chick peas (garbanzo beans) -- drained

1 large egg white

1 1/2 tablespoons fresh parsley -- chopped

1/2 teaspoon ground cumin

3/4 teaspoon ground coriander

1/8 teaspoon ground turmeric

1 teaspoon salt

1/8 teaspoon pepper -- freshly ground

12 tomato slices -- thin

12 green pepper rings -- thin

12 red onions rings -- thin

1 cup part-skim Mozzarella cheese -- grated

 

Combine first 6 ingredients in medium bowl. Stir water and oil together in small

cup. Add all at once to flour mixture, stirring with fork until combined and

dough leaves sides of bowl. Turn out on lightly floured surface and knead about

30 times. Cover with bowl. Allow to rest for 10 minutes.

 

Dissolve bouillon powder in boiling water in small saucepan. Stir well. Cook

onion and garlic in broth for 7 to 8 minutes until soft.

 

Put next 8 ingredients into food processor. Process to combine. Add broth

mixture and process until almost smooth.

 

Lightly grease flat working surface. Roll out dough to fit 14 inch (35 cm) pizza

pan. Lightly grease pizza pan and fit dough in, making slightly raised edge all

around. Spread chick pea mixture over crust. Bake in 425 F (220 C) oven, on

center rack for 15 minutes. Top with tomato slices, pepper rings and red onion

rings. Sprinkle with mozzarella cheese. Bake for 15 minutes until cheese is

lightly browned.
