Guest guest Posted June 3, 2002 Report Share Posted June 3, 2002 * Exported from MasterCook * Polenta Wedges Recipe By :Jean Paré Serving Size : 0 Preparation Time :0:00 Categories : Company's Coming Jean Paré Low-Fat Cooking Luncheon Fare Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces condensed chicken broth 4 3/4 cups water 1 1/2 cups cornmeal 1/4 cup light Parmesan cheese -- grated 1/2 teaspoon oregano or Italian spice 1/4 cup fresh parsley -- chopped 2 tablespoons finely diced pimiento, drained, or roasted red pepper 1 tablespoon light Parmesan cheese product -- grated Bring broth and water to a boil in non-stick skillet. Add commeal slowly, stirring constantly with whisk for about 25 minutes, until mixture is very thick and leaves sides of pan. Stir in first amount of Parmesan cheese, oregano, parsley and pimiento during last 5 minutes of cooking. Pour into lightly greased 9 inch (22 cm) pie plate. Spread polenta evenly. Cover with plastic wrap and let cool until firm. Remove polenta from pie plate to cutting board. Cut evenly into 8 wedges. Place wedges on foil-lined baking sheet. Lightly grease top of polenta and sprinkle with second amount of Parmesan cheese. Broil on center rack in oven for about 10 mins until warm and golden on surface. 1 wedge: 126 Calories; 6 g Protein; 1.5 g Total Fat (0.6 g Sat., 2 mg Cholesterol); 311 mg Sodium.
