Although she recalls watching Julia Child's cooking classes on television when she was still in high school, she's basically a self-taught cook who enjoys baking and creating low-fat recipes with " the most natural ingredients possible. " Challenging Jan's artistic talents was this sumptuous cheesecake. " A chocolate version of the cheesecake has been a family favorite for years, " she told us. " I changed it to caramel-my favorite flavor-and added a praline sauce to dress it up. It took several tries to get it just right, much to the delight of my faithful taste testers. " Jan's patience paid off. Her Caramel Cheesecake with Praline Sauce won the Grand Prize in the Dessert category of Good Morning America's Cut the Calories Cook-Off. And that's not all. Barely six months later, Jan's snow -dusted English stone village, a gingerbread construction of awesome detail, won the 1999 Grand Prize in the Gingerbread House Competition staged each year by the Grove Park Inn Resort in Asheville, North Carolina. Good Morning America Covered that event. GRAND PRIZE WINNER, DESSERTS For this " best of show, " Jan Curry teamed two favorite flavors-caramel and praline. But she managed to keep the fat and calories well within bounds. Evaporated skim milk, a godsend to anyone trying to shed a few pounds, forms the base of the sauce, its creaminess and slight caramel flavor contributing to a deceptive richness. 1. Preheat oven to 325F. Coat 8-inch springform pan with nonstick cooking spray (preferably butter-flavored) and set aside. 2. For crust: Combine crumbs and sugar, sprinkle evenly over bottom of prepared pan, and set aside. 3. For filling: Pulse cottage cheese in food processor until completely smoothabout 1 1/2 minutes. Add cream cheese, sugar, water, and vanilla and pulse 1 minute more. Add flour and pulse 30 seconds, scraping down work bowl sides twice. Add egg and egg white and pulse 30 seconds to combine, again scraping down work bowl sides. 4. Taking care not to dislodge crumbs, pour filling into pan and smooth top. 5. Bake uncovered 45 minutes; turn oven off and leave cheesecake in oven 30 minutes longer-just until cheesecake springs back when lightly touched. 6. Transfer cheesecake to wire rack and cool in upright pan to room temperature. Cover with plastic wrap and refrigerate for at least 4 hours. 7. For sauce: Bring milk, sugar, and vanilla to a boil in a very small heavy saucepan over moderate heat. Reduce heat to low, then cook, stirring constantly, until flavors marry- 1 to 1 1/2 minutes. Remove from heat and mix in pecans. Cool to room temperature. 8. To serve, cut cheesecake into 12 wedges and ladle a little sauce on each plate alongside.
