Hummus with Tomato Cucumber Relish and Greek Olives

7 ounces Athenos Original Hummus

Cucumber-Tomato Relish:

2 tomatoes -- seeded and chopped

1 small cucumber -- peeled, seeded, diced

1 teaspoon peeled fresh chopped ginger

2 cloves garlic -- chopped

1 shallot -- chopped

2 tablespoons rice vinegar

2 tablespoons vegetable oil

1/2 teaspoon chile paste

1 teaspoon chopped fresh cilantro

Salt

Freshly ground black pepper

1/2 cup pitted diced kalamata olives -- or other cured olives

6 leaves lettuce

6 French rolls

or squares focaccia

 

To prepare the relish, combine the tomatoes, cucumber, ginger, garlic, and

shallot in a medium bowl. Add the vinegar, olive oil, chile paste, and cilantro.

Season to taste with salt and pepper, and mix well. Set aside.

 

To prepare the sandwiches, split each French roll in half and spread each bottom

half with Athenos Hummus. Top with relish, chopped olives, lettuce, and the

remaining pieces of bread. Cut the sandwiches in half and serve.
