Guest guest Posted June 4, 2002 Report Share Posted June 4, 2002 * Exported from MasterCook * Fresh Corn Tamales Recipe By :Evelyn Tribole 2000 Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 large ears of corn -- shucked, husks reserved 1/3 cup cornmeal 2 tablespoons unsweetened applesauce 1 tablespoon cornstarch 2 tablespoons light butter -- melted 1 tablespoon 2% buttermilk 2 teaspoons sugar 1/2 teaspoon salt 6 slices reduced fat Muenster cheese -- halved 1. Cut the corn kernels from the cobs and transfer the kernels to a food processor. Discard the cobs. Add the cornmeal, applesauce, cornstarch, butter, buttermilk, sugar, and salt. Pulse until the texture resembles a coarse paste or wet cookie dough. 2. For each tamale, overlap 2 corn husks lengthwise. Spread about 3 tablespoons of the corn mixture onto the husks, leaving at least a 1-inch border on all sides. Place 1/2 slice of cheese in the center of the dough. Pick up the 2 long sides of the husk and bring them together (this will cause the dough to surround the filling). Fold up the short sides of the husk to form a tightly closed package. Secure by loosely tying it closed with kitchen twine. 3. Carefully transfer the tamales to a steamer or steaming rack set over 1 to 2-inch of water in a large pan. Bring the water to a simmer, cover the pot, and steam for 40 minutes, or until cooked through. Serve in the husks. (Do not eat the husks.)
