Raspberry Inferno Sauce for Poppers

Amount Measure Ingredient -- Preparation Method

1/2 chipotle pepper -- (canned) see tip

1 teaspoon adobo sauce

1/2 jalapeno -- seeded

8 ounces raspberry preserves

 

TIP - Buy the chipotle peppers already in the adobo sauce, and use them

in the recipe.

 

1. Use a processor to mix well. Chill and store refrigerated. Serve

chilled. GREAT as a sauce for chicken wings and jalapeno poppers.

We can buy chipotle chiles already sauced in the adobo sauce -- which is a spicy

(ketchupy vinegar) dark smoky sauce. Also, if you want to make your own, I just

posted a recipe for that too. the subject of that message read " chipotles in

adobo "

sorry. that was too cryptic. look for cans of chipotle in adobo -- 4 to 6 ounce

sized in the supermarket next to small canned of diced roasted chiles, jars of

mole, jars of enchilada sauce. There are a number of brands and it really

depends upon where you are which brand would be available. -pat

Chipotles en adobo is packaged by many companies -

Goya for one. I can always find theirs. There are

other Mexican companies though. I've seen a few of

them in stores.

 

Check the Mexican/Goya section of the store. It won't

be in with regular canned goods. Only ethnic sections.

If you can find an actual Mexican grocery store, they

will have it definitely.

 

Adobo sauce itself is, just as Pat says, a vinegary

brown sauce, that the chipotles come in. Some recipes

say to use it and some say to discard it. I usually

use a bit of it as it has great flavor.

 

I know of a few places on the net that sell it too.

Look for any site that sells chile peppers. You will

have good luck there.
