Guest guest Posted June 4, 2002 Report Share Posted June 4, 2002 another salad idea!-) * Exported from MasterCook * Mixed Vegetables with Tarragon Vinaigrette Recipe By :Australian Women's Weekly c1993 Serving Size : 2 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces golden nugget squash -- (1 small pumpkin) 6 ounces new potatoes (6 small) -- halved (thin skin, scrubbed) 3 1/2 ounces snow peas TARRAGON VINAIGRETTE: 2 teaspoons chopped fresh tarragon 2 tablespoons white wine vinegar 2 teaspoons olive oil 1/2 teaspoon cracked black pepper 1/4 teaspoon sugar -- (or honey to taste) 1. Boil, steam or microwave squash, potatoes and snow peas separately until just tender; drain. Cut the pumpkin and clean; chop or cut into wedges the length of the pea pods. Combine the vegetables in a serving dish. Add vinaigrette while vegetables are warm. Serve warm or at room temperature. 2. VINAIGRETTE: combine all ingredients in a shaker jar; shake well. ~MC estimate: 163 Calories; 5g Fat (24.9% calories from fat); 4g Protein; 28g Carbohydrate; 3g Dietary Fiber; 0mg Cholesterol; 9mg Sodium. TIP - Golden nugget squash is a hard-shelled, miniature pumpkin-shaped, finely-ridged, winter squash that ranges in size from an orange to a grapefruit. Golden nuggets have a very large cavity and little flesh. The flavor is mild and squashy. Gold nugget is available summer, fall, and winter. Golden nugget is an excellent source of vitamin A and have substantial amounts of vitamin C, iron, and potassium. It use is limited because it is too hard to halve, so it must be baked or steamed whole. Full maturity is absolutely essential or it will have no taste. Golden nugget can be stored up to two months at room temperature. Do not refrigerate raw golden nugget squash. However, always refrigerate it after cooking.
