Wash and prepare the vegetables. Separate the cauliflower into florets. Half the carrots and quarter the zucchini lengthwise, then cut both into 1-inch long pieces. Chop the scallions into large pieces. See the chili and cut into find strips (threads). 2. Bring half an inch of water to the boil in a wok and add the salt. Cook the cauliflower florets for 4 minutes with the lid on. Add the carrots and cook together for 3 minutes longer. Pour off the water and leave the vegetables to drain. 3. Melt the butter in the wok. Stir fry the chili, saffron, turmeric, ginger and cumin. 4. Add the cauliflower, carrots, zucchini and scallions, mix together and stir fry for 4 minutes. 5.
