Guest guest Posted June 5, 2002 Report Share Posted June 5, 2002 * Exported from MasterCook * Bell Peppers with Carrots Recipe By :United Nations International School 1997 Serving Size : 3 Preparation Time :0:00 Categories : Main Dishes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup coarsely ground unsalted roasted peanuts 2 cups grated carrots 1 tablespoon sesame seeds 1 teaspoon grated gingerroot 1 teaspoon sugar salt to taste 1 pinch asafetida (optional) 1/2 teaspoon ground turmeric 3 small green bell peppers 1 teaspoon vegetable oil additional oil as desired -- see comment 1. GREEN BELL PEPPERS: Trim the stems (not too long). Slice the tops from the bell peppers and reserve. Remove the seeds and ribs. 2. In a medium bowl, mix peanuts, carrots, sesame seeds, ginger, sugar, salt, asafetida and turmeric. Set aside. 3. Sprinkle a little salt into peppers and turn upside down for about 30 minutes. 4. Add 1 teaspoon oil to the carrot mixture. Turn peppers right side up and stuff them with the mixture and cover with tops. COMMENT: original recipe suggests 4 to 5 tablespoons of oil: 1 tsp for the stuffing and the remainder to coat pan and cook peppers. It also suggests we use a nonstick pan and less oil. 5. Warm oil (see comment) in a small saucepan and arrange peppers upright. Cook, uncovered, over moderate heat for 10 to 12 minutes. Cover, reduce heat and cook for about 25 minutes.
