Fruity Coleslaw

1 cup fat-free plain yogurt -- (8 ounces)

1/2 cup honey

1/4 cup white vinegar

3 tablespoons lemon juice

1/2 teaspoon salt

1/8 teaspoon pepper

1 can reduced-sugar fruit cocktail -- (16 ounces)

2 cups blueberries

1 cup sliced fresh strawberries

1 medium ripe banana -- sliced

1 package coleslaw mix -- (16 ounces)

 

Drain fruit cocktail. In a large bowl, combine the yogurt, honey, vinegar, lemon

juice, salt and pepper. Add the drained fruit cocktail, blueberries,

strawberries and banana. Stir in coleslaw mix. Yield: 12 servings.

 

Nutritional Analysis (according to magazine): One serving (3/4 cup) equals 109

calories, trace fat (trace saturated fat), trace cholesterol, 121 mg sodium, 28

g carbohydrate, 2 g fiber, 2 g protein. Diabetic Exchanges: 1-1/2 fruit, 1

vegetable.

all, " says Susan Skinner-Martin of Sandusky, Ohio. " It's a favorite at picnics

and potlucks. For fun, try varying the fruits by substituting apples, cherries

or raisins.
