Guest guest Posted June 6, 2002 Report Share Posted June 6, 2002 * Exported from MasterCook * Taco Salad Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup fresh-squeezed orange juice 1 tablespoon fresh-squeexed lime juice 1 tablespoon cider vinegar 1 teaspoon chile powder 1 teaspoon Dijon-style mustard 1/2 teaspoon honey 1/4 teaspoon ground cumin 1/8 teaspoon salt 2 tablespoons olive oil 4 corn tortillas 8 cups lightly packed salad greens 1 cup finely diced jicama 1 cup finely diced red bell pepper 1 cup Tofu Chorizo -- (at room temperature) 1/2 medium avocado -- peeled and sliced (optional) Sliced red onions -- (optional) The tartness of lime and the sweetness of bell pepper and jicama balance the flavors in this spicy salad. 1. In a small bowl, whisk together orange Juice, lime juice, vinegar, chile powder, mustard, honey, cumin and salt. Slowly pour in olive oil and whisk for a no ute to emulsify. (Do this ahead of time, if possible, so flavors have time to blend; whisk again before using-) 2. Preheat oven to 375F. Cut tortillas into 6 or 8 triangles each and place pieces on a baking sheet. Bake for 8 to 10 minutes, until tortillas are crisp and lightly browned. 3. In a large bowl, toss greens, jicama, and bell pepper with the dressing until well combined. Transfer to a large salad bowl or place equal portions of salad in each of 4 shallow serving bowls. 4. Arrange tortilla chips around edge of salad(s). Mound chorizo 'in center(s). Garnish with avocado slices and onions, if desired. Serve immediately.
