Guest guest Posted June 6, 2002 Report Share Posted June 6, 2002 * Exported from MasterCook * Chickpea Salad with Mixed Vegetables (Shinbera Salata) Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup dried chickpeas (garbanzos) Water as needed 1 pound green beans -- cut into 1-inch pieces 1 pound broccoli -- trimmed and cut into small florets 1 large tomato -- diced 1/2 small onion -- finely chopped 1 jalapeno -- seeded and finely chopped 10 pitted black olives -- quartered 2 tablespoons olive oil 2 tablespoons balsamic vinegar 2 tablespoons tamari or soy sauce 1 tablespoon lemon juice 1 tablespoon mustard 1 clove garlic -- minced 1/4 teaspoon salt -- or to taste 1/4 teaspoon pepper -- or to taste 1.Rinse and sort chickpeas. Place in a medium bowl, cover with cool water, and soak overnight. 2. Drain chickpeas and transfer to a medium pot. Cover with 4 cups water and bring to a boil. Reduce heat and simmer until chickpeas are tender and water is nearly gone, 50 to 60 minutes. Add more water, if needed. Set aside to cool. 3. In a large pot or steamer, steam beans and broccoli until tender, 4 to 6 minutes. Remove cooked vegetables and set aside to cool. 4. In a, large bowl, Combine chickpeas, beans, broccoli, tomato, onion, jalapeno, and olives. In a small bowl, combine oil, vinegar, tamari, lemon juice, mustard, garlic, salt, and pepper. Stir or whisk to mix well. Pour over vegetables and toss to mix.
