Guest guest Posted June 6, 2002 Report Share Posted June 6, 2002 * Exported from MasterCook * Bulgur Pilaf Recipe By : Stress, Diet & Your Heart, by Dean Ornish, page 283 Serving Size : 6 Preparation Time :0:00 Categories : Fruits Grains And Cereals Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups bulgur 3 cups water 1 teaspoon safflower oil 1 onion -- chopped 2 tablespoons sunflower seeds 1 teaspoon crushed cumin seeds 3 tablespoons raisins or currants 1/4 teaspoon ground cardamom -- up to 1/2 1 tablespoon apple or tamarind concentrate -- (optional) (available in Middle Eastern markets) Serves 6. Place the bulgur in a bowl. Bring the water to a boil and pour over the bulgur. Allow it to sit for 30 minutes. Meanwhile heat the oil in a large, heavy-bottomed skillet and pour over the onion with the sunflower seeds until tender. Add the cumin seeds, raisins or currants, and cardamom and sauté another 2 minutes. Remove from the heat, toss with the bulgur and the apple or tamarind concentrate (if you wish), and serve.
