Guest guest Posted June 7, 2002 Report Share Posted June 7, 2002 * Exported from MasterCook * Greek Grainberry Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup spelt berried 4 cups water 1/2 cup thinly sliced onion 1/2 cup julienned seedless cucumber 1/2 cup julienned red pepper 2 tablespoons minced fresh dill 1 tablespoon minced fresh mint 1/4 cup extra virgin olive oil 3 tablespoons fresh lemon juice 1 garlic clove -- minced 1/2 cup crumbled feta cheese -- (optional) Salt and white pepper 1. In a medium saucepan, combine spelt berries and water. Bring to a boil, then reduce heat and simmer for 1 hour, or until just tender. Drain well and chill. 2. In a large bowl, combine chilled spelt, onion, cucumber, red pepper, dill, mint, olive oil, lemon juice, and garlic. Fold in feta cheese, if desired.
