Greek Grainberry Salad

1 cup spelt berried

4 cups water

1/2 cup thinly sliced onion

1/2 cup julienned seedless cucumber

1/2 cup julienned red pepper

2 tablespoons minced fresh dill

1 tablespoon minced fresh mint

1/4 cup extra virgin olive oil

3 tablespoons fresh lemon juice

1 garlic clove -- minced

1/2 cup crumbled feta cheese -- (optional)

Salt and white pepper

 

1. In a medium saucepan, combine spelt berries and water. Bring to a boil, then

reduce heat and simmer for 1 hour, or until just tender. Drain well and chill.

 

2. In a large bowl, combine chilled spelt, onion, cucumber, red pepper, dill,

mint, olive oil, lemon juice, and garlic. Fold in feta cheese, if desired.

Season to taste with salt and pepper, refrigerate until served.
