Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 12 ounces mushrooms -- sliced 1 seeded green bell pepper -- julienned 2 cloves garlic -- minced (2 to 3) 14 ounces canned stewed tomatoes 14 ounces canned tomato purée 2 seeded and minced pepperoncinis -- up to 3 2 teaspoons dried oregano 1 teaspoon dried basil 1/2 teaspoon red pepper flakes 1/2 teaspoon salt 12 ounces spaghetti Makes 4 servings This piquant Italian dish is seasoned with red pepper flakes and feisty pepperoncinis (yellowish green Italian hot peppers). Arrabiata means " enraged " or " angry " in Italian. Pepperoncinis can be found in the Italian section of most supermarkets. In a large saucepan, heat the oil over high heat. Add the mushrooms, bell pepper, and garlic and cook, stirring, over medium heat for 7 to 9 minutes. Stir in the stewed tomatoes, tomato purée, pepperoncinis, oregano, basil, red pepper flakes, and salt. Reduce the heat to low and cook for 20 minutes, stirring occasionally. Meanwhile, in another large saucepan bring 3 quarts of water to a boil over medium-high heat. Place the spaghetti in the boiling water, stir, and return to a boil. Cook until al dente, stirring occasionally, 8 to 10 minutes. Drain the spaghetti in a colander. When the sauce is ready, transfer the spaghetti to warm serving plates and spoon the sauce over the top. Serve with warm Italian bread. Variation: For an even spicier dish, add one or two fresh jalapeno or serrano peppers (seeded and minced) to the sauce along with the mushrooms and pepper.
