You can of course use this dressing also on other salads. Enjoy, Eruna * Exported from MasterCook Mac * Tomato Salad with Fresh Tarragon and Shichimi Recipe By : Eruna Schultheiss Serving Size : 4 Preparation Time :0:00 Categories : salads tried and tested Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tomatoes -- cut in segments 2 tablespoons fresh tarragon -- chopped DRESSING: 1 teaspoon miso -- heaped 2 tablespoons sherry vinegar 1 tablespoon dry vermouth 1/4 teaspoon Shichimi Togarashi - Japanese Seven Spice This salad can be made with a variety of herbs. I like it equally with fresh basil, oregano, chives and even green onions. If you prefer you may heat up the vermouth before adding it to the dressing. I don't: one quarter of a tablespoon want get me intoxicated. Also, the tomatoes don't absorb all the dressing, so you'll get just a fraction of 1/4 tablespoon anyway. However, do not serve this salad to a person who does not consume any alcohol for religious or other reasons. Shichimi Togarashi is available in Japanese groceries, where it is also sold as Seven-Spice Red Pepper. It contains a coarsely crushed mixture of red pepper, a special Japanese pepper called sansho, roasted sesame seeds, roasted white poppy or hemp seeds, white pepper, and tiny bits of orange peel and seaweed. Serves 4 Arrange the tomato segments on individual salad plates or one serving platter. Prepare the dressing by putting all ingredients for the dressing into a small jar. Shake vigorously. You may need to help the miso get dissolved with a fork or chopstick. Shake again until you have one smooth dressing. Pour the dressing over the tomatoes. Divide the chopped tarragon or herb of your choice equally and top tomatoes with it.
