Here is the veggie recipe from Redbook for April. kathleen * Exported from MasterCook * Cheddar-Fontina-And Olive Sandwiches Recipe By : Redbook Magazine, April 2002, page 168 Serving Size : 1 Preparation Time :0:00 Categories : Sandwiches Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup light mayonnaise 1 tablespoon lemon juice 1 teaspoon honey 1/4 teaspoon hot pepper sauce 3 ounces shredded sharp white cheddar -- (1 1/2 cups) 3 ounces shredded sharp reduced-fat yellow cheddar -- (1 1/2 cups) 2 ounces shredded fontina cheese -- (1 cup) 1/4 cup chopped green olives 1/4 cup chopped pimientos 1/4 cup minced scallions 6 thick slices sourdough bread arugula or romaine lettuce tomato slices Makes 6 sandwiches. Prep time: 10 minutes 1. Stir together mayonnaise, lemon juice, honey, and pepper sauce. Add cheeses, olives, pimientos, and scallions; stir gently to coat. 2. Spoon 1/2 cup of mixture on each slice of bread; top with arugula and tomatoes.
