I've been going through a lot of women's magazines that someone gave me,

and each seems to have a token vegetarian recipe. Here is the veggie

recipe from Redbook for April. kathleen

Cheddar-Fontina-And Olive Sandwiches

Amount Measure Ingredient -- Preparation Method

1/2 cup light mayonnaise

1 tablespoon lemon juice

1 teaspoon honey

1/4 teaspoon hot pepper sauce

3 ounces shredded sharp white cheddar -- (1 1/2 cups)

3 ounces shredded sharp reduced-fat yellow cheddar -- (1

1/2 cups)

2 ounces shredded fontina cheese -- (1 cup)

1/4 cup chopped green olives

1/4 cup chopped pimientos

1/4 cup minced scallions

6 thick slices sourdough bread

arugula or romaine lettuce

tomato slices

 

Makes 6 sandwiches. Prep time: 10 minutes

 

1. Stir together mayonnaise, lemon juice, honey, and pepper sauce. Add

cheeses, olives, pimientos, and scallions; stir gently to coat.

 

2. Spoon 1/2 cup of mixture on each slice of bread; top with arugula and

tomatoes.

 

Each sandwich: 243 cal., 13 g fat, 14 g protein, 16 g carb.
