Ginger Pear Crumble

Amount Measure Ingredient -- Preparation Method

3/4 cup whole-wheat pastry flour

or all-purpose white flour

1 tablespoon lemon zest -- grated

1 tablespoon fresh ginger -- grated

1/4 cup brown sugar -- may double

1/4 cup butter

5 cups pears -- sliced

1 tablespoon lemon juice

whipped cream or frozen yogurt -- to serve

 

1. Prepare grill for indirect heat as described previously.

 

2. Mix the flour, lemon zest, ginger, and brown sugar in a bowl. Using a pastry

cutter, two knives, or a food processor, cut the butter into the flour mixture

until the mixture is crumbly but not sticky.

 

3. Place the pear slices in an 8 " x 8 " square baking dish, spreading them

evenly. Sprinkle with lemon juice. Spoon the crumb mixture over the top of the

pears.

 

4. Bake on the grill for 20 to 30 minutes, checking for doneness periodically

(when the pears are tender and the top is browned). This dish will be juicy.

 

5. Serve straight from the grill with just a dollop of whipped cream or frozen

yogurt (as desired). Makes 6-8 servings.
