Guest guest Posted June 10, 2002 Report Share Posted June 10, 2002 * Exported from MasterCook * Faki Soupa (Lentil Soup) Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large onions -- chopped 2 tablespoons olive oil 3 cloves garlic -- minced 1/2 teaspoon turmeric 1/2 teaspoon coriander 4 cups chopped fresh tomatoes -- or 2 16-ounce cans 1 pound red or brown lentils -- (2 cups) rinsed 8 cups vegetable stock 1/2 pound green beans -- ends trimmed, cut in 1-inch pieces 2 tablespoons chopped fresh oregano -- or 2 teaspoons dried Salt and pepper This typical one-pot Greek dish can be made with cooked white beans, too. 1. In a large heavy pot, saute onions in oil over medium heat until translucent, about 5 minutes. Stir in garlic, turmeric, and coriander, and cook for 30 seconds. 2. Add tomatoes, lentils, and stock, and bring to boil. Reduce heat and simmer, partially covered, until lentils are tender, about 40 minutes. 3. Add green beans and oregano, and continue cooking until beans are tender, about 10 minutes.
